Paneer Jalfrezi Recipe | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

A popular recipe of paneer from the restaurant menu which you must try ! Spicy and yummy.



250 grams cottage cheese (paneer), cut into 1 inch fingers
1½ tablespoons oil
1 teaspoon cumin seeds (jeera)
1 large onion, finely chopped
1 tablespoon ginger-garlic paste
½ teaspoon turmeric powder
1½ teaspoons red chilli powder
Salt to taste
1 large tomato, finely chopped
1 teaspoon coriander powder
¼ cup tomato puree
1-2 dried red chillies
1 inch ginger, cut into thin strips
1 green chilli, finely chopped
1 medium onion, sliced
1 medium tomato, deseeded and sliced
1 medium green capsicum, cut into strips
1 tablespoon tomato ketchup
½ teaspoon garam masala powder
2 teaspoons chopped fresh coriander leaves
Fresh mint sprig for garnishing


1. To prepare onion-tomato masala, heat 1 tablespoon oil in a non-stick pan. Add ½ teaspoon cumin seeds and sauté till it changes colour. Add finely chopped onions and sauté for 2-3 minutes.
2. Add ginger-garlic paste and sauté for 1 minute. Add turmeric powder, 1 teaspoon chilli powder, salt, finely chopped tomato, coriander powder and tomato puree, mix and cook on medium high heat till the oil separates. Transfer in a bowl.
3. Heat remaining oil in the same non-stick pan. Add remaining cumin seeds and when it changes colour, add dried red chillies, ¾ of ginger strips and green chilli and sauté for 30 seconds.
4. Add sliced onion and sauté for 1 minute. Add sliced tomato, toss and cook for 1 minute. Add capsicum strips, toss and cook for 1 minute.
5. Add onion-tomato masala, tomato ketchup, salt, remaining chilli powder and garam masala powder and mix well.
6. Add cottage cheese fingers and toss. Add coriander leaves and toss well.
7. Serve hot garnished with remaining ginger strips and mint sprig.
